Cafe Escapes Mocha Coffee

I call these tasty treats “refrigerator cookies” because I leave the dough in the refrigerator and just bake as many cookies as I need at a given time. Then I eat the cookies while they are still warm. You can bake them all at once and serve them at room temperature, but the combination of butter and whole grains tend to make a drier cookie once cooled. You can get around this by using an oil that is liquid at room temperature, such as olive oil, but you will be missing out on that great buttery taste. Plus warm cookies are insanely good.

Ingredients for 5 dozen whole grain chocolate chip refrigerator cookies

  • 1 1/4 cup of whole grain wheat flour
  • 1 cup of whole grain oat flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1 teaspoon of sea salt
  • 1 cup of butter (2 sticks) at room temperature
  • 1 cup of brown sugar
  • 2 teaspoons of vanilla extract
  • 1 teaspoon of hazelnut extract (the whole grains already provide a nutty background flavor; this will compliment that)
  • 2 large eggs
  • 2 cups of chocolate chips (I like to use dark chocolate chips for this recipe, but any type will do)


Combine the two whole grain flours, baking soda, baking powder and sea salt in a medium-sized mixing bowl. Whisk well to combine and aerate the ingredients.

Beat the butter with either a stand mixer or a hand mixer. Add the sugar and beat until well creamed. Add the vanilla and hazelnuts extracts along with one of the eggs. Beat well. Add the other egg and beat again. Add half of the flour mixture and beat until it just comes together. Repeat with the other half of the flour mixture. Add the chocolate chips and gently stir to distribute. It is important not to over-mix once the flour is added; this will over-develop the gluten found in wheat flour and result in a tough cookie.

Use wax paper to roll the cookie dough into logs about 1 1/2 inches thick. Place these logs into a resealable plastic bag and place that into the refrigerator. Cut 3/4 inch slices of this cold dough and bake them on a parchment lined cookie sheet at 375 degrees F until they turn lightly golden around the edges; this should take about 9 to 12 minutes. Turn the baking sheet around halfway through the baking process if your oven does not bake evenly throughout. Let the cookies cool for one minute, then serve while still very warm with a cup of freshly brewed Cafe Escapes Mocha Coffee.

For an elegant fine dining experience, try Nikolai’s Roof Restaurant in the Hilton Atlanta Hotel, at 255 Courtland Street. Nikolai’s has won the Triple A Four Diamond Award for 24 consecutive years. Chef Stephanie Alderete was recently named one of the 2013 Top 5 Rising Chefs in the US by Gayot. Her specialties are French and Russian cuisine, and the sophisticated menu changes seasonally. Entrees include beef, lamb, and seafood selections. Dinner is served Tuesday-Saturday. Early evening specials are available Tuesday-Friday from 5:30-6:30pm for $39 per person. A special four course dinner menu is available for $82 per person. Complimentary valet parking is available.

Carnegie’s, at 55 Park Place, is a great choice for a business lunch. Located in the heart of downtown, at the corner of Auburn Avenue and Park Place, Carnegie’s has been serving weekday lunch for nearly two decades. The menu offers burgers, sandwiches, and salads as well as chicken and fish entrees. Diners can overlook Woodruff Park.

Big Kahuna, one of the city’s newer restaurants, has a casual, beach inspired theme. Lunch and dinner are served Monday-Saturday. The menu offers juicy burgers, salads, tacos, fajitas, and seafood. Enjoy a tropical cocktail on their patio. The restaurant is located at 330 Peachtree Center Avenue.

HotHouse Cafe

The Minus was chilling our bones and we looked for a place to warm ourselves, have a good meal and top it off with some mind involving conversation. We found just the place: The HotHouse Cafe in Toronto on Church Street.

OK, so we did not just randomly bust into this place. It was recommended by a good friend and long time resident of Toronto. It was a day off for Canadians but not very crowded at 3pm. The space is very bright and airy. We had seats right next to the ‘floor to ceiling’ windows. It was wonderful to be in a warm, colorful and comfortable restaurant while mere inches away there unravelled a winter wonderland.

Our lunch included salad, thin crust gourmet pizza, pasta, beer, sparkling water, water, iced tea … Each dish was well presented, light and very tasty. Salad was fresh and crispy, just seasoned enough. Pizza had the right combination of herbs and spices. I did not personally try the pasta but from the empty plates around me I concluded that it was right on the spot. We felt pleasantly full at the end and satisfied. Our server was pleasant and not pushy.

If I did not live across the continent I would make this my regular hangout and lunch stop. Definite recommendation. Go there!

Kings Arms Restaurant in Rutland

Wooden beams, exposed brickwork and a roaring log fire create a cosy ambience that is both rustic and elegant. The luxurious Inn that the restaurant is housed in, makes the ideal get away for a weekend or mid-week break, so why not treat yourself to some fabulous food and a stay in one of England’s oldest and best loved Inns? As with many British restaurants in Rutland the menu is seasonal but when available appetizers can include smoked and deep fried lamb sweetbreads with tartar sauce soused herrings with curried egg salad, sourdough, apple and capers or Colchester oysters with lemon and shallot vinaigrette.

The menu proudly states that all game dishes served are exclusively ‘wild game’. Diners can enjoy mains of roast grouse with bread sauce, game chips, root vegetables and Madeira sauce, smoked pigeon breast salad with black pudding, apple, beetroot, toasted hazel nuts and pancetta or roe deer saddle tournedos with celeriac puree, fondant potato, braised red cabbage and glace. Seafood is also on offer and for guests in the mood for something a bit different the monkfish supreme in a Thai-style coconut, vegetable and crayfish claw crème with steamed rice is a real treat! Classic dishes such as Launde Barnsley chop with crispy sweetbreads, dauphinoise potatoes and cherry tomatoes or the Lincolnshire red filet steak and foie gras with rosti potatoes, buttered vegetables and port glace are sure to impress.

There are not many restaurants in Rutland offering a specialized asparagus menu, but The King’s Arms takes great pleasure in celebrating this fantastic, English ingredient. When in season the asparagus menu has delicacies such as asparagus with smoked eel, tomato salad and Hollandaise or asparagus served plain with pan friend pancetta and herbed garlic sourdough croutes. Anyone wanting to take home a treat will be delighted to know that goodies are available for purchase from the traditional smokehouse on site. Hot smoked Rutland trout, smoked Stamford cider and mustard roast ham and black pudding made with Jimmy’s very own special spice mix are just a few of the culinary treats guests can take away.

Don’t even get me started on the desserts, which quite simply are out of this world! The usual classics like vanilla crème brulee, fruit crumble and sticky toffee pudding can all be found, and of course each one has that unique Kings Arms twist! However it’s the ‘A Little Something Else’ part of the dessert menu that will pique the interest of many diners. The amaretto biscuit and orange parfait terrine with strawberry and orange salad is light and refreshing while the deep fried Christmas pudding with brandy sauce ice cream and apple compote is pure indulgence! With food this good it’s easy to see why The King’s Arms Restaurant in Rutland is one of the top destinations for anyone serious about great British cuisine

La Dijonaise Cafe

My favorite dishes here are the quiches, chicken dishes and crepes. Hamburgers are awesome. They are made from fresh ground meat and priced around $6 including fries. Freshly baked bread and/or rolls start of each meal. Full entrees like Chicken Dijonaise, Marsalla Chicken or other beef and steak dishes are priced around $15 at lunch time. The quality of services and cuisine is very consistent at La Dijonaise.

For dessert I would recommend the opera cake. Simply delicious. Their chocolate chip cookies also commend attention. Completing the meal with coffee rounds the entire experience …. There is a take out area as well where customers mostly pick up their bakery items. Coffee is quite good. It does taste better when enjoyed in a nice cup in the restaurant. The coffee cups to go they have here affect the coffee taste.

We have been coming here for a few years and will continue to do so in the future … Highly recommended indeed..
